So to answer my own question, You can get 4 sheets of ply in!
Just get them to cut it first!
First 3 sheets.

Second load was 4 sheets.

Ended up down sizing to 12mm ply as the old bloke on the cutting said it would be more than strong enough. I tend not to disagree with people who have been in the same trade for more years than I've been on the planet.

Made a start on getting them up today and OMG I've got some Crap in that garage!
All the stuff you see behind the cupboards had to be removed first. That took 2 hours!

So, why first 3 sheets, then 4 in the car?
12mm 4' x 8' sheets weigh about 15Kg each, I think. Maybe 20Kg for some types of wood, but no more than that.
So 7 sheets shouldn't weigh more than 140Kg at the most.
I checked up on weights recently because I needed some 22mm plywood for a wasteboard on my CnC mill.
(The roof rack I have is rated max 40Kg)
Getting the plate up on the roof rack was easy(one of the guys in the lumber yard helped), getting it back down alone without damaging anything... not all that easy.

Time and space in the garage. Picked the first bits up after work on Tues and spent the next couple of days building the upper units.
Picked the second load up Yesterday and was planning to build them today but changed my mind and decided to get the top ones mounted first so they are out of the way and don't need to be moved anymore.
PS, Before anyone points it out, the furthest door needs some adjustment but I'll wait till I get them screwed to the wall first as its currently gravity holding them in place. Ran out of time tonight.

Too late for you now but my niece has roof bars on her Peugeot and when she wanted to fetch some long sheets of ply the other day she just tie wrapped two pieces of 2x1 across the roof bars. Two tie wraps on each end in a cross and the wood stayed firm 6 miles each way and got the ply home.
So where does this bit go then ?
