Mine did this a few years ago, you can diagnose it by just disconnecting the MAF sensor and the car will drive better straight away without putting any warning lights up.

Have you got the hook that holds the carrier up when the wheel is fitted ? You unscrew it with the wheel brace in the back of the boot space.

Aldi had some cut to size mats in and they are really heavy rubber. I put a piece of anti slip under the driver side one just in case.

If the original structure is still underneath it it is only there to level the floor up. I can't see why you shouldn't remove it if it's only bolted in.
