With the starter off, and the injectors off, you've removed the two most common reasons for lockup.
That leaves 'crankshaft/crankshaft bearings' and ''stuck piston', really.
Is it possible that the 'low oil' warning was 'low oil pressure'?
A final possibility is that 'something' is jamming the crankshaft or piston rods. And that is a really horrid thought.
I don't think the problem will be really visible until the sump is removed, also.
I once messed up when I was tinkering with an old engine, and got one of the bearing shells on the piston rod to shift when I was putting it together. It ended up gripping the crankshaft so hard that it was imppossible to turn the engine by hand. (That was the old 1.4i from my car. I sometimes try out things on that one before attacking the current engine)
