We have not encountered this system yet on a Berlingo, but I assume it will be the same as a C4 Picasso etc.
If the park brake motor is on the Caliper itself, then you need a diagnostic tool to set the callipers in release mode, then simply squeeze the pistons back.
After fitting the pads, pump the pedal & reset everything on the diag machine.
Without diag it is not possible to do this job.

If it is the same system as the C4 Picasso the video in the link shows how to do it with no diagnostic tool, you just remove the motor from the caliper which then allows you to rewind the piston.

I would definitely not do this. They can be tricky to set up with diag , let alone removing the motors.
VW have been using this system for years & they fail all the time for water getting into the motors, the last thing you should do is risk this for the sale of not having the correct diagnostic tools.

I though when using a diagnostic tool you just put the handbrake into service mode (or whatever it's called) and then fitted the new pads, then exited service mode. . .  is there more to it than that?

One of the reasons VW's had problems with water getting into the motors was because the plastic case of the motor was developing cracks, not sure if they have addressed this now.

The VW lads have been removing the motors from the calipers to fit new pads for years without problems, if the motor is replaced correctly it will be as good as it was before you removed it.
