trying to decide if better to buy a van or a multispace to covert to a camper. Van I would want to add windows. Multispace I would need to remove the seats etc. Either way I would build (re)moveable units as I will also use to transport wood and furniture for my business.
any thoughts?

I think if you add windows to a van you will have to pay VAT to HMG

Too much hassle and waste with a passenger car. Get a van and you have a blank sheet for insulation, wiring and protective boards for floot and walls. Barn doors are also more suitable for cargo needs.

Personally, I'd go for a car with a tailgate. No issues with speed limits, potentially lower road tax. You can always remove interior trim to make more space, the tailgate acts as a nice sun or rain shade. With tinted windows, you can't see inside the back during the day.
Adding windows to a van may also give insurance issues.

I considered both options and went for the Multispace. The seats are easily removed and in the end I decided I wanted part car / part camper so am opting for a boot jump or removable option like Chapel offer for the camper side of things.

Like Sparky58 I too considered both options and went for the Multispace with a boot jump as being the most flexible choice for me. 3.5 years on I haven't regretted it

I have the Multispace works well as microcamper. It easily returns to car mode which it is most of the time. In camper mode still looks a car and does not attract motorhome issues if parked up in some areas. A couple of campsites I visited didn`t want vans as could be full of high spirited builders.
