Can any one explain the colours of the stereo wiring and what goes where? I've googled and YouTube and can't seem to find what the colour of their wires go to

I was coming on to see what people do with radio upgrades, the fact noone has answered you leads me to think people dont upgrade them, which is surprising as the built in screen system is a shocker.

What are you specifically looking to do, get an existing set-up working? upgrade to another unit? Remember that if changing the factory fitted unit, the controls for the MFD are controlled through it and you also need an adapter box [which you can buy] to allow the steering controls to still function.
