I’ve just bought a Berlingo Multispace 2003
About to start converting, absolute beginner and so glad I’ve found this forum. 
Any pointers of where to find out about taking the rear seats out ?

Hi there, welcome!

Rear seats in that generation of Berlingo don't come out without tools I'm afraid - but they should just unscrew pretty easily - you'll need a T30 Torx bit if I remember right.

Thank you, I’ll see if I can borrow one. Is there a handbook that’s got this information in?
Or one that would be handy at all?

This is the owners handbook but you may want an actual workshop manual: (which I don't have for an M59)
