Power steering fluid

Quick update:
I finally got round to doing this on Saturday. It's not a difficult task, but I couldn't do it without the hose clip pliers mentioned in the draining/refilling instructions. I bought some cheap ones from amazon for about £8. For my van, I only had to remove the fixings studs on the front half of the mud guard, then I could bend it out of the way to allow access to the hose for draining. I had removed the undertray last year, which may have made the job a little easier. When refilling, because the filling reservoir is so low down in the engine bay, I used a foot or so of 25mm conduit to aid the process.
I used just under 1 litre of fluidmatic, I had in mind that I'd need more than that so either I was wrong or there's still some of the old fluid there in the system. Who knows, I have loads spare now.

I have to remove the oil instead. I have too much... what could be the problem?

That's not good, extra oil doesn't add itself buddy. Someone has put it in there.
Get some drained out, it's dangerous to run the engine with more than the MAX level on the stick.
Alternatively you could have fuel building up in the engine oil, from bore wear or from over-fuelling and that is not good either. Get the oil checked by a mechanic and for good measure, do a full oil and filter change.
Do you have a tuning box fitted or is it remapped?

I didn't explain well. I was talking about the steering fluid, not the engine oil

Ahhhh then that's easy, use a syringe to take some out. Get them on Amazon in various sizes. It's unlikely there is extra getting in the reservoir so must have been too full already? Does no harm mind you. Not in the power steering anyway.

But why has it increased? Could it have absorbed moisture like brake fluid? In this case it would be diluted and therefore to be replaced, right?

Not sure, I've never heard of power steering fluid increasing and if it's synthetic as most oils / fluids are now, then it shouldn't absorb water. Maybe look online for a power steering specialist and give them a call, ask the question.
