Quite often the gaskets die of old age. A light skim cut, new bolts and it's good to go; you normally replace the radiator cap, thermostat, water pump and timing kit at the same occasion.

There's always light corrosion to the face of the head where it contacts the gasket; water seeps through and eats a little of the alloy away. You'd have to ask people closer to home for the price of what I call a "basic service" - chemically clean the head, new valve stem seals, skim cut and touch up the valve seats if necessary.
You can get just the skim cut done sometimes, but then removing all the shavings thoroughly will be your responsibility.
