I had to hunt around to find out how to do this myself, found an incorrect solution, but worked it out myself from there! So....
First off, before you start, know the date (there's a good reason for this!).
Hold the LEFT button to the side of the LCD display down for approx five seconds, it will flash "ENGLISH" at you. If you want to change the language, press the RIGHT hand side button to cycle through available options.
Pressing the LEFT button again (just a normal press, not five seconds), will take you to the minutes part of the display. Press the RIGHT button lots of times until you get to the required minute.
Pressing the LEFT button again (just a normal press, not five seconds), will take you to the hours part of the display. Press the RIGHT button until you get to the required minute.
And so forth, for the year, month, and date. (If you don't know the date and have to faff about with your phone like I did to find out what the date was - you'll find your car thinks you've finished and it auto-saves what you've put in so far, and to then change the date you have to do more button pressing. No hardship but if you're impatient like me.....grrr).
So, as you've just read, when the time/date is set, leave it alone and it will auto-save.
